Newly formed Nest Egg Hospitality Group opened its first establishment, Mink, around Thanksgiving. Located at 1701 Trumbull Avenue in Detroit’s Corktown, the space only has 20 seats, but executive chef Cameron Rolka said that’s part of its appeal. “I think it brings a different vibe of dining experience...it’s nice to have some place that’s super small,” he said. While its physical location is compact, the small plates menu is full of big flavors, with a lot of influences from Rolka’s travels. Spilt into categories like seafood, vegetables, and meat, each section of the menu has a raw, fresh-prep item, such as their apple salad. Dishes that are proving popular already include their shrimp roll and raw oysters on the half-shell, both of which pair well with the variety of sakes the restaurant offers. They also serve wine, beer, and hard cider. With a constantly evolving menu, Mink plans to start a caviar service and add more items with Eastern European flavors as the year continues.
